Try This Delicious and Nutritious Healthy Spring Recipe

Turkish Potato Salad

Nothing welcomes spring better than a fresh salad. But if you’re not a fan of the traditional greens that come in most salads, you’ll love this Turkish potato salad. It’s easy to make and is a true crowd-pleaser. This hearty and nutritious recipe requires just 10 ingredients to make. Eat it as a light lunch or serve it up as a side dish.

Ingredients

  • 3 pounds potatoes (Yukon Gold potatoes deliver a firmer texture while Russet potatoes make a creamier salad)
  • 4 green onions, diced
  • 1 green bell pepper, diced
  • ¼ cup chopped parsley
  • 2 Tbs. chopped fresh mint
  • 3 Tbs. olive oil
  • 1 Tbs. lemon juice (freshly squeezed)
  • ½ tsp. red pepper flakes (optional)
  • 2 tsp. sea salt
  • 1 tsp. sumac (can be substituted with lemon pepper)

Instructions

Step 1: In a large pot, add 1 Tbsp of salt and enough water to fully cover potatoes, then bring to a boil.

Step 2: Boil potatoes for up to 30 minutes or until fork-tender.  water to help season the potatoes.

Step 3: Allow the potatoes to cool, then remove the peels and chop the potatoes into large chunks.

Step 4: Combine the potatoes, parsley, green onions, mint and green pepper in a large mixing bowl.

Step 5: Top the potato mixture with lemon juice and olive oil. Sprinkle red pepper flakes, sumac and salt on top. Gently toss ingredients to combine, being careful not to overmix and mash the potatoes.

Step 6: Serve immediately.

Store leftovers in the refrigerator for up to four days. The total time to make this salad (including preparation, cook time and potato cooling time) is approximately 40 minutes. Each batch will yield between four and six servings. If you want to feed a larger group or make leftovers to enjoy throughout the week, simply double the recipe.
