So without further ado, here’s the recipe you’re likely to make over and over this summer because it’s just that good.

Zesty Tequila Lime Shrimp Zoodles

Ingredients

You’ll need the following ingredients to make this deliciously easy recipe:

  • 1 shallot (minced)
  • 2 cloves of garlic (minced)
  • 3 Tablespoons butter (divided)
  • 3 Tablespoons lime juice
  • 1/3 cup tequila (or plain soda)
  • 1 Tablespoon olive oil
  • 1 ½ teaspoons lime zest (grated)
  • 2 medium zucchini (spiralized)
  • 1 pound uncooked shrimp (peeled and deveined)
  • ½ teaspoon salt
  • 1/3 teaspoon pepper
  • ¼ cup fresh parsley (minced)

Once you have all the ingredients ready to go, it’s time to prepare this delightfully easy dish. Total preparation time is just 30 minutes, so this is the perfect meal to make if you are short on time or you simply don’t want to spend more time in the kitchen than necessary.

Directions

  1. Heat 2 tablespoons butter over medium heat in a large skillet.
  2. Add garlic and shallot and cook for 1-2 minutes or until tender. Remove from heat.
  3. Stir in lime zest, tequila or soda, and lime juice. Over medium heat, cook until liquid is mostly evaporated (around 2-3 minutes).
  4. Add remaining butter and olive oil. Stir in zucchini and shrimp, then sprinkle with salt and pepper.
  5. Cook until zucchini is crisp-tender and shrimp begins to turn pink (about 4-5 minutes).
  6. Sprinkle with parsley.

You can even add an extra sprinkle of lime zest to the top of your dish for a little more of that tangy flavor you love.
