Healthy Satisfying Dinner Recipe for Staying on Track in the New Year

Chicken and Cashew Lettuce Wraps

Ingredients

Here are the ingredients you’ll need to make this nutritious dish, which serves four people.

  • 1 lb. ground chicken or turkey
  • 8 shiitake mushrooms, sliced thinly
  • 1 Tbsp. minced ginger
  • 1 green onion, sliced thinly
  • 1 small carrot, sliced thinly (or 3 baby carrots, sliced thinly)
  • 2 Tbsp. hoisin sauce
  • 2 ½ Tbsp. water
  • 10 iceberg or Boston lettuce leaves
  • ½ cup All-Bran Original cereal or All-Bran buds cereal
  • 1/3 cup cashews, chopped
  • 2 tsp. vegetable oil (divided)

Directions

  1. In a medium skillet, heat 1 tsp. olive oil over high heat.
  2. Add chicken and cook until brown (about 10 minutes), breaking into smaller pieces with a spatula or spoon. Add ginger and cook for approximately one minute. Transfer chicken and ginger mixture to a plate and cover to keep warm.
  3. Add remaining 1 tsp. of olive oil to the same skillet, then add cooked mushrooms and cook until golden in color (about 2 minutes).
  4. Add carrots and green onions and cook for an additional minute.
  5. Add chicken and ginger mixture back into the skillet and toss with water and Hoisin sauce.
  6. Sprinkle cereal and cashews on top of the mixture, remove from heat, and cover. Let sit for approximately 5 minutes.
  7. To serve, put a spoonful of filling in each lettuce leaf. Roll of the leaf and enjoy!

If you want to add more zing to your sauce, add a little bit of Sweet Thai chili sauce to your lettuce leaves.
