Healthy Memorial Day Meal Ideas

But if you figure out your menu in advance, you’re more likely to make healthy choices. Here are a few healthy Memorial Day meal ideas that taste great and can fuel your body without guilt.

Sweet Pork Lettuce Wraps

If you’re looking for a healthy, quick and easy meal you can serve up to friends and family on Memorial Day, try sweet pork lettuce wraps.

Ingredients:

  • 2 tsp. vegetable oil
  • 1 tsp. ground allspice
  • 1 lb. lean ground pork
  • 2 Tbsp. cilantro, chopped
  • ½ tsp. ground ginger
  • 4 green onions, sliced
  • 2 Tbsp. low-sodium soy sauce
  • 2 cloves garlic, minced
  • 8 tsp. plum sauce
  • 16 romaine lettuce leaves
  • 1 lime, sliced into wedges

Directions:

  1. Heat vegetable oil in a large frying pain over high heat. Add pork and cook until browned. Drain grease.
  2. Stir in the allspice, ginger, soy sauce, green onions and garlic. Cook about 2 minutes, until green onions are tender.
  3. Fill pork leaves with about 1/3 cup of pork mixture. Add cilantro and plum sauce to the top.
  4. Serve with lime wedges on the side.

Patriotic Dessert Skewers

Do you need to throw together a quick dessert for a Memorial Day party you forgot about? Try these patriotic dessert skewers, which are colorful, delicious, and help you get in your daily serving of fruit.

Ingredients:

  • 1 cup Greek yogurt (plain)
  • 4 oz. cream cheese, room temperature
  • 1 tsp. vanilla
  • ¼ cup raw sugar
  • 1 pint blueberries
  • 14 oz. angel food cake, cut into 1-inch cubes
  • Between 50-100 medium strawberries with stems removed
  • 28 skewers

Directions:

  1. Combine the yogurt, vanilla, sugar and cream cheese in a medium bowl. Mix well until sugar dissolves.
  2. Alternating between strawberries and cake, slide two strawberries and two angel food cake cubes onto each skewer.
  3. Top each skewer off with three blueberries.
  4. Place completed skewers on a platter then refrigerate until you’re ready to eat.

Cucumber and Avocado Salad

Need a lightweight, refreshing salad that you can prep in minutes? This cucumber and avocado salad is just the thing you’re looking for.

Ingredients:

  • 3 Tbsp. fresh-squeezed lime juice
  • 1 medium shallot, thinly sliced into rings
  • 1 Tbsp. fresh mint, thinly sliced
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. fresh basil, thinly sliced
  • ½ tsp. salt
  • 1 ripe avocado, halved, pitted and sliced
  • 1 English cucumber, thinly sliced

Directions:

  1. In a large bowl, toss lime juice with shallot rings. Let stand for about 10 minutes or until softened.
  2. Whisk basil, salt, mint and oil into the lime juice mixture. Add cucumber and gently toss to coat.
  3. Let the cucumber mixture marinate for about 10 minutes, tossing occasionally.
  4. Transfer the cucumber to a platter using a slotted spoon.
  5. Place sliced avocado on top of the cucumbers and drizzle salad dressing over the top.
  6. Serve right away.
